Back From Break

It's been a little while since I posted.

Here's my meal-plan for when I am at work

Breakfast: All the veggies I can find and put them with three eggs in an omelette
Lunch: Salad with tomatoes (and lately I have been adding cut-up cucumbers), half a PB&J sandwich on multigrain bread, and snack-size Peanut M&M's
Dinner: Oven Baked Chicken with rice.

Whenever I get hungry in between meals, I have a baggy of trailmix in my apron pocket that I eat a small handful of.  Lately it's been a little rare that I've been getting hungry before meals (yay!)

Meal-Plan when At Home:

Breakfast: All the veggies I can find and put them with three eggs in an omelette
Lunch: It's usually based on what I have at the house, but most of the time, I will have a turkey sandwich on multi-grain bread and whatever veggies (spinach, tomatoes, etc) I feel like eating at the moment!
Dinner: Oven Baked Chicken with rice.

My snack is usually whatever I have laying around.  If I have zucchini, I've been making zucchini fries.  If I have sweet potato (usually when I'm wanting a sweet fix) I just learned how to make sweet potato fries with a fat free marshmallow dipping sauce!  (My little creation!)

I have been running on my days off (Last week it coincidentally was every other day, so it made it easier to do so.) This week, it has been raining like crazy! (I love it, by the way!) So every time I'd go and make an attempt to run, it'd start to rain.  And I don't mean sprinkling, I mean pouring down RAIN!  However, I did manage to run a few times this week!!

Yesterday I ran, and because I was trying to get it out of the way, I ran at 2PM, in the middle of July, in Georgia.  Never a good idea.  I figured if I drank water after every lap I'd be alright.

1 Lap: I was doing good
2nd Lap: I was starting to feel a little worked out... but I figured that was good, to keep going.  FEELING THE BURN!! lol
My third lap... I was feeling terrible.  I felt like I was going to pass out and throw up at the same time.  And then I still had to make it up three flights of stairs.

Here's a few things that I've been making here, that I'm kind of proud of

Salmon Melts!

These were absolutely delicious!! I mixed a packet of salmon with some spinach, tomatoes, bell peppers, and one egg together and put it on top of an open faced bagel.  I would say that I did a multi-grain bagel, but let's face it; I'm poor and these were what I could afford.  I put a half a slice of Provolone cheese (figured a little bit wouldn't hurt).  These were so good!! I'd definitely say to you all to try some!! 

My Turkey Pesto Sandwich!

At the grocery store where I work, they have fresh herbs.  I had read on the link that I had supplied on an earlier post about how basil makes pesto. All it really takes is basil, garlic, and olive oil.  So I minced up the basil and garlic, put it in my vegetable chopper thingy, and whirred it.  Put in some oil, whirred it again.  Put on my sandwich in place of mayonnaise, and it was DELICIOUS!!  Definitely try it out!! A nice, NICE addition to any sandwich!


My last little foody encounter, I didn't take a picture of, because, well it is one of those instances that you make something, and it doesn't look good, but it tastes delicious!  I made guacamole with two avocados and a 99cent packet.  It's really good!! I need to add some chopped tomatoes, but yep, really yummy!  I have been using it as sandwich spreads.  Not sure how else to use it... since chips are no-no's.  But yum!

Powered Through

Aside from my delicious omelette this morning, I had a salmon melt on Honey Wheat bread for lunch, asparagus and almonds for snack, and chicken and rice for dinner!

I was almost not going to work out, but I conjured up some strength and willpower from somewhere, and lapped three times instead of two like on Thursday.  On my way!!!

By the way, on a side note, have any of you ever tried to make your own pesto??? I saw a friend post this recipe and in this recipe is another recipe for making your own pesto.  I love pesto with crab and such, and I always see it ready-made at the grocery store for $3-$4.  But I grabbed some fresh, FRESH basil at the supermarket for $1.50 and had everything else to make it!! So I'm excited!! Yay!! Can also replace mayo on sandwiches!!

Best Omelette EVER!

I just made an omelette with: Spinach, green onions, tomatoes, red bell peppers, green bell peppers, mushrooms, finely chopped garlic, serrano peppers, and I think that's it.

DELICIOUS!! And so good for you!  I had read somewhere that mushrooms are amazingly good for you and parsley as well!!

Sore!!!

It seems just as inevitable as breathing, the first day you exercise, you are SORE, even more so after a day!  I had plans to exercise this morning, but I don't think my legs can take it.  So I am going to let them rest! Plus I have to work today, and I have off tomorrow, so I think all and all it works out!

Made a kale, tomato, green pepper, onion, and zucchini omelette this morning! It wasn't as bad as I thought it would, considering I'm very picked with zucchini and I put in a TON of kale.  I also need to pick up a few ingredients at work for the rest of my omelette.  I am thinking about getting mushrooms, spicy peppers, red bell peppers, and some other things.  Garlic, dill yummmm!!!

I also made a yummy smoothie!  First smoothie of many I'm sure!! I'm trying out different fruits to work together.  I usually get pineapples, peaches, and mandarin oranges.  I tried mandarin oranges and pineapple together, I get alot of pineapple.  I'm starting to grow out of pineapple.  Thinking about getting a kiwi or mango to try out ... Put in some yogurt, milk, and ice cubes.  It's actually pretty good.  Just alot of pineapple!  :) It will be a great after work-out snack!

So I am looking forward to working out tomorrow!  And feeling the burn again!  I'm actually feeling it in my thighs and my gluts! <-- I think that's how you spell it!  So I'm doing something right!!

First workout!

Today marks the second week anniversary of my decision of turning my life around.  I have been eating healthy but haven't exercised at all.

Not sure about anybody out there, but eating healthy was never the problem for me, but the exercise was.  I'm a pathological couch-potato!  So I decided one thing at a time: First, to make eating healthy a habit, common, etc so when I got to the exercise, I wasn't being bombarded by all sorts of new things.  I think it kinda scares me off some, doing it all at once.

The eating healthy has been going very well.  I think I've had two pieces of cheese in 2 weeks (which is good!) Yogurts, vegetables, fruits, lean meats, wheat bread, etc etc.

Today's the day I told myself would be acceptable for me to start working out.  Two weeks seems enough time to develop a habit, especially if you are doing it every day.

My work-out plans were thrown awry for a minute or two.  I drove to a nearby, what I thought was abandoned, warehouse building with a huge loading area which seemed perfect to run around, without anyone seeing me all sweaty and gross, at my worst, etc.  There were people and cops there to boot.  So I knew I had to go.  My apartment also has a Fitness Room that is very limited, so I figured, I might as well go ahead and use it, especially since my first plan fell through.  Deadbolted from the inside.

I chucked it up and decided to run/walk up and down the sidewalk in front of my actual apartment.  Generally speaking, one way was 1/8 of a mile, and I did four reps, so I walked/ran half a mile!  For my first day, I think that's pretty good!!

Going to go weigh myself today while I go grocery shopping!! I should have done it when I started, but I keep forgetting!! Ahh!! lol Ate some yummy oatmeal made by my great husband.

Thinking about Fourth of July

I've been seeing all sorts of posts on Facebook about great foods that work well with 4th of July.  And almost all of them I've seen, are the really really bad kind for you.  Ribs, cakes, cookies, briskets, hamburgers, hot dogs, etc etc.  Don't get me wrong, they look really really good, especially when they are so daunting as to include pictures.  Seriously: drool-worthy.  But is a no-no.

I am not totally into Fourth of July to begin with.  My parents were never the great "Grill-Masters", never really had the "Flag-Cake", barely even acknowledged the holiday even existed, except for staying at home to stay away from the craziness that became supermarkets and highways.  People driving to and from barbecues and camp-grounds, with fireworks and their special homemade BBQ sauce.

I started to think, there are so many festive ideas to celebrate Fourth of July.  However, it would be nothing more for an excuse for me to bring out the folding chairs, the mini George Foreman grill, and a new kind of Smirnoff!

I want to make some burgers with turkey meat.  Mix in kale, spinach and tons of other veggies, even some spicy ones!  With some whole wheat hamburger buns!

Was also thinking about "Shish-kabobs" Pieces of chicken, and veggies sprinkled with garlic salt and lemon juice, and grilled on the GF grill!

I had just gotten some blueberries and strawberries at the grocery store!! I was just going to put some yogurt with the fruit, but look at the link!! Look at that picture!! It's so cute! I won't lie, I'll probably do some vanilla yogurt, blueberries, strawberries, and top it off with cool whip and granola (Or something I can sprinkle on top!)
